Hot summer days (and nights!) call for cool refreshing desserts. This yummy layered strawberry frozen dessert is easy to make and will help keep everyone cool on the hottest of days. You can use fresh or frozen strawberries, and feel free to substitute real whipped cream for the whipped topping. Enjoy!
Strawberry Layered Frozen Dessert
Makes 16 small squares.
Ingredients
First Layer
- 16 chocolate sandwich cookies (like Oreos)
- 4 cups frozen strawberries, thawed
- 1/4 cup of lemon juice
- 1 cup of vanilla almond milk
- 4 ounces whipped topping (like Cool Whip)
- Additional strawberries, sliced (approximately 1 cup)
Second Layer
- 8 ounces of cream cheese (not the spreadable type)
- 4 ounces of whipped topping, softened
- ½ cup of powdered sugar
- 1 tablespoon lemon juice
Directions
Line an 8×8 baking dish with aluminum foil or parchment paper.
Arrange cookies in a layer on the bottom of the pan.
Mix together strawberries, lemon juice and almond milk in a blender.
Pour strawberry mixture into a mixing bowl and fold in whipped topping.
Scrape from bowl and pour over the cookies.
Top with a layer of sliced strawberries.
Place in freezer and let set for 30 minutes to an hour before adding the next layer.
Cream together cream cheese with the powdered sugar until smooth. Add in the lemon juice and continue mixing.
Incorporate the whipped topping and blend until just mixed.
Spread the second layer out over the top of the strawberry layer and then freeze for at least 4 hours.
Once frozen, remove from pan, slice into small squares and serve.
